Inspired by the neon of urban Tokyo, the design features a backdrop of the city skyline, new seating, upholstery, lighting and LED screens.
A representative for YO! Sushi told BigHospitality that though the design would be implemented in its Aberdeen stores in two months’ time; all the brand’s restaurants were unique and future redesigns would depend on individual sites.
Vanessa Hall, CEO of YO! Sushi, said: “Liverpool ONE has long been one of the strongest performing YO! Sushi in the UK, and was therefore the ideal venue in which to launch our exciting new concept.”
YO! Sushi serves over six million customers a year in the UK, and is set to expand to 74 restaurants nationwide in 2015.
It follows a decade of expansion for the brand, which opened five restaurants in London last year and has key sites established in Edinburgh, Leeds, Manchester and Glasgow.
