Jon de Villa is the head chef of Flesh & Buns from the team behind Bone Daddies.
The former chef de partie at Michelin-starred Zafferano will work alongside chef proprietor, Ross Shonhan, at the Covent Garden restaurant.
De Villa said: "‘The scope for innovation, from a chef’s point of view, is incredibly exciting at Flesh & Buns. I hope the menu continues to excite our customers equally."
