Hawksmoor co-founder Will Beckett talks to BigHospitality about the company's recently launched neighbourhood restaurant offering Foxlow and the ethos behind it for our fifth In Operation with... video. 

Speaking at the opening of the third Foxlow in Chiswick earlier this month, Beckett, who runs the company with Huw Gott, said although Foxlow was 'doubling up' with the purchase of two restaurants​ from restaurateur Sam Harrison, its expansion plans were not aggressive. 

"We like growing, but we are not doing it for its own sake," he says. "We're not trying to see how much money we can make. We are just trying to do things without compromising on things that matter to us."

For Becket the aim of the restaurant brand, which opened its first site in Clerkenwell in 2014, is to create a well-liked neighbourhood restaurant company with its well-chosen suppliers and staff credited with helping to build its success so far. 

"We are trying to make it feel real and independently neighbourhoody," he says. "We'd like to think that if we opened a Foxlow near you you'd be excited."
