The team – which re-imagines French classics without the ‘pretension and formality’- will be transforming the space in to a ‘neon-filled, luxuriant Le Bun diner’ from 12 November.
Guests are promised new dishes including Duck ‘Fries’ Poutine - confit duck, red wine gravy, homemade curds, chilli & coriander – and Le Truffle Double Double - two aged brisket & chuck patties, truffled veal jam, truffle mayo, american cheese and brioche.
A weekend brunch menu is set to feature Le Benedict Bun - with eggs, maple bacon, shaved asparagus, hollandaise, brioche - and a Pig Cheek Hash.
A Le Bun statement described the Zetter as a ‘natural’ fit for the restaurant given the space’s roots in French cuisine.
The pop-up replaces Bruno Loubet's Grain Store Unleashed, which ran for a limited period earlier this year after the chef closed Bistrot Bruno Loubet at the hotel after five years.
Le Bun at Le Zetter will run until 20 December.
