Bea Vo to open second American restaurant Boondocks

Stax diner owner Bea Vo has announced plans to open a second American restaurant in London - Boondocks - this spring. 

Vo, who founded Bea's of Bloomsbury before opening Stax within London's Kingly Court, has secured a 450 sq m site behind Moorfields Eye Hospital for her latest venture. 

The 70-cover Boondocks will serve burgers, chicken and waffles in-house and to takeaway seven days a week from 12pm to midnight. The takeaway counter will also be an incubator for a new bakery concept which will serve American style bakery items such as cinnamon buns, donuts and monkey bread. The site will also house an event space with capacity for 100 people. 

Vo said she was taking advantage of a larger space and kitchen to expand her existing menu as well as bring back dishes from Stax that she had been unable to continue serving due to lack of space and equipment.

She said: "We are so lucky that Stax opened and hit the ground running. From day one, we’ve been packed, with queues round the corner. Sadly, with a kitchen that is only 10 square metres, we could only fit in one fryer, which meant that we couldn’t carry on offering things like our Blooming Onion. 

"Boondocks will have a lot more space, more seating, and room for more equipment, which means we’ll be able to offer a wider menu with our riff on deep South cooking and bring back the infamous Brunch from Bea’s Diner at Maltby Street."

Vo, who is executive chef and creative director of Stax and Boondocks, founded Bea's of Bloomsbury in 2008. She remains a shareholder in the business but has no role in the day-to-day running of the three-strong group.
