Paul Foster hits £100,000 crowdfunding target

Paul Foster has hit his £100,000 crowdfunding target to open his first solo restaurant Salt in Warwickshire.

The chef reached his goal with just 17 hours to go before the project ended.

Foster stepped down from his position as head chef at Mallory Court hotel in Royal Leamington Spa last month in order to pursue his ‘lifelong dream’ of opening his own venue​ alongside his wife Rhiain.

In a message to his Twitter followers Foster said: “Just want to say a massive thank you to everyone that has supported us. It has been an incredible and emotional journey.

“It will take a while to say thank you to everyone and reply to everyone but for now I just need to take a moment to take it all in, as it is very overwhelming.”

His campaign has seen a swell in support from fellow chefs on Twitter with Daniel Clifford, Rene Redzepi and Kenny Atkinson among those backing his plans.

Foster has said he is aiming to make Salt ‘cool’ and ‘different’ with a focus on top quality British produce rather than ‘building the Eiffel tower out of a carrot’.

His career has included stints in Restaurant Sat Bains, Belmond Le Manoir aux Qaut’Saisons in Oxfordshire and Tuddenham Mill, near Newmarket in Suffolk​.
