Black Roe Poke Bar & Grill will be an ‘intimate’ 60-cover restaurant serving Pacific Rim-inspired cuisine.
It will feature a bar specialising in Poke - a Hawaiian marinated raw fish dish - and serve a selection of meats cooked over a Kiawe wood grill.
Downstairs a 20-cover chefs table will be lined by tanks filled with live seafood, leading in to an open kitchen.
Dishes will include Bison Rib-Eye Steak, Fennel-Tomato Confit and Yuzu Soy Hollandaise and Smokey Lamb Rack, Coconut and Piquillo Reduction.
A former director of operations for Nobu Europe, Zdesa helped launch Nobu London and oversaw a total of seven restaurant openings for the group.
He then moved to develop his brainchild Ping Pong as a global brand, and worked with Alan Yau in developing Michelin-starred Hakkasan.
Zdesar opened his ‘one off’ Japanese-Peruvian restaurant Chotto Matte in Soho in 2013.
Black Roe Poke Bar & Grill will open at 4 Mill Street in Mayfair.
