The 58-cover, 1,367 sq ft site is at the entrance to the development’s £20m 100,000 sq ft leisure extension. The décor will be by Brighton-based agency DesignLSM and feature strong colours reminiscent of Mexico.
It will be the 28th location for the group since its launch in London in 2007 by Californian Brandon Stephens, who was inspired by the burrito culture of San Francisco.
Tortilla property director Rob Lucy said: “Scotland has been a target in our expansion plans for some time, but only now, with the opening of Silverburn’s leisure extension, has the perfect location become available.”
The site will join a host of other brands opening sites at the Hammerson complex, including Thaikhun, Carluccio’s, Zizzi, Five Guys, and Nando’s.
Tortilla has sites across England and Wales, including across central London, including Islington, Bankside, Oxford Circus, Canary Wharf, Hammersmith, Clapham Junction, Camden, and Westfield Stratford, plus locations in Bluewater, Southampton, Leeds, Brighton, Liverpool, Cardiff, Nottingham, Birmingham, Nottingham and Guildford.
