Ian Swainson has been named head chef at the Michelin-starred The Pass restaurant at the South Lodge hotel in Sussex. He joins from three years at the Michelin-starred Samling hotel in Cumbria, and steps into the shoes of Matt Gillan, who recently left the hotel after 10 years. Swainson’s CV also includes the likes of L’Ortolan, Seaham Hall, La Becasse, and Chewton Glen.
