‘O ver claims the water has multiple health advantages and ‘significantly’ improves the taste and texture of food.
The restaurant promises to be a light and airy space, with a 113 sq.m bar and dining area, four metre high ceiling and white marble lined bar.
Neapolitan chef Gugliemo Vuolo will oversee the venue, while pizza chef Tommaso Mastromatteo will head up the kitchen.
Mastromatteo is one of just 15 teachers from The True Neapolitan Pizza Association, which aims to promote and protect authentic Neapolitan pizza worldwide.
The restaurant will launch next to Borough Market in June.
