Smoke & Salt will offer an ‘affordable’ (£38 a head) five-course tasting menu upstairs at Islington’s Chapel Bar from Monday to Thursday from 30 May.
It is the brainchild of Remi Williams and Aaron Webster, who have combined their high-end experience to offer ‘modern dining with ancient techniques’.
Webster’s CV boasts stints at The Latymer and Dinner by Heston Blumenthal, while Williams has worked at Boston’s Craigie on Main and Deuxave.
Dishes are set to include Grilled Spring Lamb with Green Garlic, Sunchoke and Pickled Okra; and Pink Grapefruit with Grapefruit Curd, Elderflower Yoghurt and Pound Cake.
A selection of cocktails, beer and wine has also been handpicked to compliment the menu.
Smoke & Salt will be open for dinner only, Sunday to Thursday, with a brunch offering available all day Sunday.
