Strut-&-Cluck
Strut & Cluck, the UK's first restaurant to feature free-range turkey at the heart of its menu, opened in Shoreditch on 21 June.
Founded by husband and wife Amir and Limor Chen and inspired by Eastern Mediterranean home-cooking, the 75-cover restaurant is divided into several spaces, including a central bar for 12 diners, clad in tiles resembling the vivid feather formations of a strutting turkey.
Turkey, selected from farms in East Anglia, is marinated for 24 hours before being slow cooked and then finished for the desired effect. Dishes include Charcoal-grilled drumstick with roasted white cabbage and herbs, tahini, pomegranate molasses and zhoug; Limor’s classic slow-roast thigh on a bed of caramelised red onions and sweet potatoes with barberries and Hand-pulled Shawarma with dates and pine nuts on a bed of freekeh and a dollop of labneh.
