Ken Tolley is now head chef at Hoi Polloi, the English brasserie at the Ace Hotel London Shoreditch, created by the team behind East London’s Bistrotheque. Tolley has been developing a new menu with executive chef Simon Gregory, bringing previous experience from groups such as Corbin & King (The Beaumont Hotel, The Delaunay) and Soho House Group (Electric House, Dean Street Townhouse).
