Francesco Turrini is now bar manager at the Shanghai Bar at Hutong, the Chinese-style restaurant in London’s The Shard. Turrini has helped to curate a new summer cocktail menu, incorporating the site’s North Chinese flavours and styles, with each drink including at least one of the kitchen’s five key spices: coriander, aniseed, ginger, clove, or pepper.
