The 1,200 sq ft space is housed below six-metre-high railway arches at Arch 24, in the Union Street Arches near the Borough London Underground station. It will be the third venue for the group after its South Kensington and Exmouth Market locations.
The group specialises in Italian-sourced beef and tuna, and aims to bring generations of Italian butchery know-how to the business, including slow-aging of whole sides of beef – hanging for up to nine weeks ‒ and a butchery and fishmongers on-site.
Roberto Costa, group founder, explained that the arches would bring a theatrical touch to the site, which would also feature a ‘projecting stage’ to present the current choice meat cuts.
Costa added: “I wanted to find a property that had space and drama. [This site is] perfect for what we want achieve.”
The location was secured by restaurant property specialist Dean Gambles & Co, who have also worked with tops chefs Jason Atherton, Jun Tanaka, Robin Gill, and Tom Sellers in securing sites for their businesses.
