The business, which has run a stall at London's Broadway Market every Saturday for the last two years, has taken up a unit alongside Honest Burgers and Poppie's Fish & Chips at the recently-renovated Camden Stables Market.
Butchies owners Garrett and Emer Fitzgerald will open the site on 21 September, serving four different types of free-range chicken sandwiches, a selection of sides and crispy hot wings served with buffalo sauce and blue cheese sauce from 11am daily.
The pair source slow-reared higher welfare free-range chicken from Fosse Meadows Farm in Leicestershire and use a pressure fryer specially imported from the US to cook the meat.
The Fitzgeralds had been searching for a permanent site since their fried chicken sandwiches concept became popular with foodies at Broadway Market two years ago.
CODE Hospitality founder Adam Hyman is an investor in the business and will advise on future fundraising and brand development with a permanent restaurant a possibility if the Camden unit is a success.
