Yu Sugimoto is now executive chef at the two-Michelin-starred restaurant The Square.
Born in Japan, Sugimoto worked at the Imperial Hotel in Tokyo before moving to France to join two Michelin star Hôtel de Carantec. Yu then spent nine years at three Michelin star restaurant Le Meurice in Paris, where he progressed to head chef under the guidance of revered chefs Yannick Alléno and Alain Ducasse. Prior to his move to the UK, Sugimoto was chef de cuisine at two Michelin star restaurant L’Espérance Marc Meneau in France.
