The Great British Menu finalist will be cooking at Lucky Beach on Brighton’s seafront throughout November and December.
Gillan’s eight-course menu will change weekly and be served alongside a selection of wines, cocktails and soft drinks.
It follows the chef's departure from The Pass restaurant at South Lodge in Horsham earlier this year after a decade-long tenure which saw him hold a Michelin star since 2011.
An event page for the pop-up said dishes will ‘be a nod to the style of food that earned Matt a Michelin star five years running, but also offer a hint to what diners can expect at his future venture’.
Rumours of Gillan’s plans to open a permanent Brighton restaurant have been rife since he left The Pass in April.
Speaking earlier this year the chef said that while the decision to leave had not been easy, the ‘time was right’ for him to move on and he was 'looking forward' to his next venture.
