James Cochran EC3 is to open on 7 November at 19 Bevis Marks, near Liverpool Street. The 1,500 sq ft, 45-cover site will be the chef’s fourth solo venture, and first permanent site, after his now-closed pop-ups Camberwell Love, FIX in Hackney, and a summer collaboration with B.Y.O.C. Soho on Great Windmill Street.
There will be an entirely new menu with ingredients from local English suppliers, although Cochran’s signature Caribbean Jerk Chicken dish will still feature.
Typical starters and small plates will include pigeon breast with liquorice, hazelnuts and bay cream; roast monkfish with pork collar, turnip, finger limes and buckwheat; and Cornish mussels with hispi cabbage, whiskey and oats.
Larger plates are set to include Kent coast sea bass with roast onion tea, cauliflower and sea vegetables; Guinea fowl with wild mushroom, crisp potato, and chestnuts; and Lamb neck and haunch with Jerusalem artichokes, pickled beer hops, and crème fraiche.
Desserts are to include figs with honeycomb, Madeira, and lemon doughnuts; Jersey milk parfait with roasted pineapple and sesame seeds; and the playfully-named Snickerbockerglory.
