The chef will launch Henrietta, an 80-cover restaurant, at the upcoming Henrietta Hotel in early 2017.
Dishes will be ingredient-led with a ‘subtle nod to France’, while cocktail specialists Jared Brown and Anistatia Miller will curate the drinks menu.
Now he is partnering up with Experimental Group to launch the 18-room hotel, which will act as a sister site to the Grand Pigalle in Paris.
France-based Experimental Group already runs three London bars including Joyeux Bordel in Shoreditch, but the Henrietta Hotel will be its first entry into the UK accommodation market.
Xavier Padovani, of the Experimental Group, said: “We are thrilled to be partnering with Ollie on the restaurant for our first London hotel. He is leading the way in London gastronomy, and we have come to know him well, so this is a perfect fit for us.”
The Experimental Group was founded in France in 2007 and has since opened 17 bars, restaurants and hotels in Paris, Ibiza and London.
