Grab-and-go healthy food concept Abokado is planning to expand from 28 to 36 stores over the 12 months.

The business, founded by Mark and Lindsay Lilley in 2004, plans to open the stores in Central and the City areas of the capital with site number 29 to open on Tottenham Court by the end of this year.

With the new openings the company is projected to grow its annual turnover by £3m to £17m by the end of 2017.

Ex-banker Mark Lilley said he had found success by 'offering a thriving cosmopolitan London an alternative to the mainstream on-the-go chains'.

“We’re proud to have opened 28 Abokado sites around the city since launching in 2004, employing over 250 members of staff. The opening of our 30th site by the start of next year will be a very important milestone for the business," he said.

"We have worked hard to meet growing consumer demands for healthier and diverse dishes in a convenient on-the-go format, which has been integral to driving the brand’s growth and consumer loyalty”.

Abokado, which eschews sandwiches for global-inspired dishes such as noodle soups, yakisoba, salt beef bagels and and a sushi roll-wrap hybrid it calls 'shwraps', combines its founders love of new cuisines with their interest health and fitness.

The company's long term goal is to operate more than 100 stores in London and expand nationally and internationally.
