In the latest of our Chefs' Secrets of Success series, we talk to chef-patron of Sartoria Francesco Mazzei about passion, 'superstar chefs', and nurturing new talent

As chef-patron of D&D London site Sartoria (in Mayfair), Francesco Mazzei is well-known for his particular brand of high-end Calabrian dishes, bringing the 'cucina povera' of southern Italy firmly into the London high-end scene. Previously at City favourite L'Anima - now overseen by his protege and former sous chef Lello Favuzzi - Mazzei has become a passionate advocate of traditional Italian flavours and seeks to spread that message to young chefs in his kitchens.

With a burgeoning TV career, he talks about how trainees should focus on learning as much as possible, and the myth of the 'superstar' chef.
