As chef-patron of D&D London site Sartoria (in Mayfair), Francesco Mazzei is well-known for his particular brand of high-end Calabrian dishes, bringing the 'cucina povera' of southern Italy firmly into the London high-end scene. Previously at City favourite L'Anima - now overseen by his protege and former sous chef Lello Favuzzi - Mazzei has become a passionate advocate of traditional Italian flavours and seeks to spread that message to young chefs in his kitchens.
