The scheme recognises the talents of young chefs, pastry chefs and waiters and offers support to help them succeed in their career.
The AAE is an examination rather than a competition, and all or none of the candidates can achieve the award depending on their ability to reach the standards set by the judges.
Those who score the highest marks in each section will be named the Royal Academy of Culinary Arts Young Chef, Young Pastry Chef and Young Waiter of the Year 2017.
Applicants must currently be working full-time in the UK as a chef, pastry chef or waiter and should have been 20-26 years old on 31 December 2016.
Selection is based on written entries, and successful candidates will go on to regional semi-finals in March/April and finals in May/June.
