Former The Square duo to open first London restaurant

Two former colleagues from The Square in Mayfair have revealed plans to open their first London restaurant later this year.

Chef Peter Hall and sommelier Katie Exton have teamed up to launch Lorne on Wilton Road in Victoria in February.

The project has the financial backing of former The Square chef-patron Philip Howard and Blixen co-founder Clive Watson.

The 48-cover restaurant will serve a modern British menu free from ‘unnecessary frills and fuss’ alongside a concise, ‘affordable’ wine list.

Dishes are set to include Quail, Butternut Squash, Barley and Mountain Yam; Short Rib Beef, Onion, Pears and Cavolo Nero; and Yorkshire Curd Tart with Builders Tea Ice Cream.

A statement announcing the opening said the restaurant would be a ‘true collaboration between front-of-house and kitchen’.

“Lorne is born out of the desire by its dynamic and experienced co-founders to share their love of restaurants and create a fun, convivial space where food and wine sit as equals,” the statement said.

It is the first collaboration between Exton and Hall, who met while working at The Square.

Exton’s CV also includes stints at The River Cafe and Chez Bruce, while Hall has worked at Brawn and the three Michelin-starred Benu in San Francisco.
