Former The Square head chef takes over at Fenchurch Sky Garden

Dan Fletcher, former head chef at Mayfair’s The Square, is now head chef at Fenchurch restaurant, at Sky Garden on the 37th floor at London’s 20 Fenchurch Street.

Fletcher is now overseeing a team of 17 staff at the site, which is run by events company Rhubarb.

This includes Liam Fauchard-Newman – formerly of The Ledbury ‒ and sous chef James Southern, who is also from The Square. The team will now work together to create and prepare a new menu in Fletcher’s own style.

Originally from Yorkshire, Fletcher worked at The Square for two years, during which time the site – previously overseen by chef Phil Howard, now of Elystan Street ‒ held two Michelin stars.

The chef’s career has also included time working with Tom Kitchin at The Kitchin in Edinburgh, and working with Michelin-starred Tommy Banks at the Black Swan in Yorkshire.

He has also worked in kitchens across Australia, South Africa, and New Zealand.

“I am extremely excited to join the Rhubarb team and embark on this new journey on the 37th floor of this iconic building,” says Fletcher. “My cooking style is [about] fresh, clean flavours with beautiful presentation ‒ and I very much hope guests will enjoy it.”

Sky Garden is spread over three storeys, with the Fenchurch Restaurant at the top, the Darwin Brasserie bar and kitchen, and City Garden bar on the 36th​ floor, and the Sky Pod bar on the 35th​.

It offers 360-degree views across the city, and also features landscaped gardens, observation spaces, and an open-air terrace that calls itself “London’s highest public garden”.
