The German-born chef worked as chef de cuisine at the three-michelin-starred Auberge de l’Ill in France for seven years until 2014, before joining the Four Seasons in Johannesburg.
In his new role Gieselmann will oversee the launch of a new restaurant and bar project at the Hampshire hotel, set to open in September,
He will also head up a team of 35 to take charge of the entire food and beverage offering at the country manor house property.
“Dirk joins us at an exciting time here in the Hampshire countryside,” says Lynn Brutman, general manager at the Four Seasons Hampshire.
"An extensive enhancement programme is currently underway at the hotel, culminating in the launch of our brand new food and beverage product in the autumn of this year."
Gieselmann has also worked at Le Cirque in New York and the luxury La Reserve de Beaulieu hotel on France’s Côte d’Azur.
He is the latest Michelin chef to work with the Four Seasons in the UK, after Anne-Sophie Pic launched a restaurant at The Four Seasons at Ten Trinity Square in London earlier this year.
