Sibarita, meaning epicure in Spanish, will offer cheese, charcuterie and tapas-style dishes when it opens a few doors down from Garvey’s Encant restaurant on 9 June.
The chef has teamed up with his father to launch the project, fulfilling a long-held ambition for the pair to open a ‘laid-back wine and cheese joint’.
Former Encant chef Krisztian Palinkas will head up the kitchen, with dishes including crispy ‘calamares a la romana’ with Algeria pepper and toasted coriander; chicken ‘chilindron’ with crispy serrano ham alpicon; and oven-baked torta del casar cheese with farmer’s market crudites and garlic bread.
“Since even before Victor became a chef and opened restaurants of his own, we said that when I retired from corporate life we’d start somewhere like Sibarita together,” says Garvey Snr.
“When this great site came up, so close to Encant, we knew our moment had come!”
Garvey Jnr describes Sibarita as a ‘fun, casual and affordable, a place anyone can drop into at any time’, or while waiting for a table at nearby Encant.
The chef, who launched Encant in 2016, will also open Catalan restaurant Rambla in Soho in September.
