Three generations of the Roux family are to oversee the catering at Tottenham Hotspur’s new stadium when it launches in 2018.

The football club’s latest signings will create the menus for the premium On Four lounges at the 61,559-capacity venue as part of a deal with Levy Restaurants UK.

During 12 matches per season the entire menu will be designed and prepared by the Roux’s and their team, with either Albert Roux, his son Michel Roux Jr or granddaughter Emily Roux personally overseeing the service.

During other games the menus will be created by a series of guest chefs, which are yet to be announced.

The stadium’s flagship restaurant, The H Club, will offer both fine dining and a relaxed, brasserie-style menu. Guests will also have the chance to eat a Chef’s Table, or a Player’s table alongside former Spurs stars.

“This is the first time we have partnered with a sports stadium and it is marvellous that we will be involved in such an iconic new venue,” says Michel Roux Jr.

“We have already been involved in the design of the kitchens within the new stadium and look forward to developing our menus for guests to enjoy.”

The Roux family’s portfolio of restaurants includes two Michelin-starred Le Gavroche, Roux Parliament Square and the three Michelin-starred Waterside Inn run by Michel Jr’s cousin Alain Roux.

Levy Restaurants is part of Compass Group, which also works with the Roux family on the catering offer at Jockey Club racecourses across the country.
