Waka to offer Nikkei cuisine to grab-and-go

Waka is the brainchild of siblings Irakli and Nino Sopromadze and will focus on Nikkei cuisine, a fusion of Peruvian and Japanese styles that evolved in Peru in the 1800’s.
Dishes at Waka will include sea bass ceviche with leche de tigre (a citrus-based marinade); hot teriyaki rice bowls with Peruvian purple potato; and kabocha (Japanese pumpkin) and beetroot salad with rocoto dressing.
Prices will range from £4 to £7, with all dishes prepared fresh each day.
While the restaurant will predominantly be a grab-and-go operation, there will also be a 60-cover basement dining area for customers to eat-in.
Nikkei cuisine has been popularised in London in the last few years by the likes of Sushisamba and Kurt Zdesar’s Chotto Matte.
Southam Street, the upcoming venture from the team behind the acclaimed 108 Garage, is set to serve a Nikkei menu in its upstairs Raw Bar when it launches next month.
