Homage to the Breville toastie to pop up in St Pancras

Cheesmonger and natural wine enthusiast Holly Chaves is hoping to give the croque-monsieur a run for its money with a pop-up residency devoted to the iconic Breville toastie.

Located at Sourced Market at St Pancras International, the pop up will serve a tight selection of toasties during its one-month residency.

Chaves is behind cheese and wine pop-up Wine & Rind, which appears at a changing roster of bars and restaurants all over London and which is currently at Tottenham Green Market. The idea for her latest venture stems from her love of Breville toasties, going back to childhood, and a desire to give them a modern twist.

She says she tested and toasted until she came up with what she considered “the perfect combination” – a blend of Raclette and a bit of a sharp Somerset Cheddar from Barbers – one of the oldest Cheddar maker in the world - and paired with a range of fillings. These include a splash of Henderson’s; a combination of slow-cooked and crispy onions; and ham, cornichons and Dijon mustard – all partnered with pickles.

Chaves will also offer weekly specials and untoasted versions to take away and make at home.

“What I love about the Breville is that everyone can relate [to it] – everyone’s had one, everyone had a favourite filling and most people have one tucked away in a cupboard somewhere,” she says.
