Chef Simon Gregory joins Bluebird Chelsea

D&D London has appointed Simon Gregory as executive chef at Bluebird, Chelsea ahead of the group’s expansion in London and overseas.

Originally from Australia, Gregory moved to London in 2003 to cook at the Gordon Ramsay Group and worked his way up to executive chef, overseeing restaurants including Petrus, Bread Street Kitchen and Savoy Grill.

In 2014 he became executive chef at the Ace Hotel in Shoreditch, heading up its entire food and beverage offering including the Hoi Polloi brasserie.

The chef joins D&D as the group prepares to open its second Bluebird restaurant at the former BBC Television Centre development​ in White City, London in 2018.

Gregory will shortly launch his new food offering at the original Bluebird in Chelsea, which opened at the former home of the Bluebird Motor Company 20 years ago, as well as overseeing the White City development.

“We are looking to take things to the next level with the offering and there are a lot of brilliant plans for the future; so to be a part of the process is fantastic," says Gregory.

The Bluebird concept is also taking flight across the pond with its first overseas site set to launch at the luxury Time Warner Centre in New York​ early next year.
