Rosa's Thai Cafe to run vegetarian pop-up
Rosa’s Thai Veggie will replace the brand’s Dean Street site and will run for three months.
The menu will feature some new dishes including tofu satay: laab mushrooms; panang tofu and tom kha mushroom soup.
These will sit alongside vegetarian versions of classics such as Thai green curry and pad Thai, and existing vegetarian dishes on Rosa’s menus including papaya salad and stir-fried aubergine.
Co-founder and F&B director Saiphin Moore says that the vegetarian takeover is a response to the huge uplift and demand for vegetarian dishes across the group.
“I’m excited to offer my customers a restaurant dedicated to vegetarian principles," she says. "It’s a great way to showcase the versatility and exciting dishes possible in Thai food using only vegetables. Every year I go home for the Thailand Vegetarian Festival which is celebrated across all parts of Thailand and it inspires me to bring more vegetarian options to Rosa’s Thai Cafes.”
Rosa’s Thai Café began life in 2006 as a market stall on London’s Brick Lane. Saiphin and husband Alex recently appointed Grant Thornton to lead a sale of a significant stake in the business, which is thought to be valued in excess of £25m.
The group is expected to open its first regional site early next year after signing heads of terms on a premises in Liverpool’s Albert Dock area.
