Ghai joined the restaurant in 2016 and oversaw the win of its first Michelin star in the 2018 edition of the red book.
He previously worked at three of London’s other Michelin-starred Indian restaurants, Gymkhana, Trishna and Benares, and launched Bombay Bustle with Jamavar’s owners Leela Palaces, Hotels and Resorts last year.
It is not clear what Ghai has planned next, but a representative for Jamavar confirmed the group’s culinary director Surender Mohan was moving to London to oversee Jamavar and Bombay Bustle going forward.
Mohan was the founding chef the first Jamavar restaurant in Bangalore, India in 2001, and oversaw subsequent openings in Mumbai, Goa, Chennai and New Dehli.
He will be kicking off his time in London with a collaborative series that will see a different guest chef create a stuffed kulcha bread for the menu each week from 22 January.
The line-up features Agnar Sverrisson, Claude Bosi, Sat Bains, Robin Gill and Judy Joo, and on 25 February Surender will host a special dinner where all the kulchas will be served alongside a seven-course wine pairing menu.
