He joins ahead of the launch of Chucs’ upcoming third site, in Harrods' Fine Watch Room, in February.
Chucs said in a statement that Martinez will be heavily involved in the group’s future openings as well as its existing sites, working alongside group executive head chef Alessandro Verdenelli.
Prior to joining Chucs, Martinez was head chef at Maze from 2016-17, and has headed up the kitchen at Cliveden House in Taplow and The Stafford London.
“With Chucs expanding this year and entering a new phase of development, we know Carlos’s expertise will make a wonderful addition during this exciting time,” says Stephan Guicheteau, group food and beverage operation manager at Chucs.
Chucs is the sister dining brand to the 1950’s swimwear and men’s fashion label of the same name.
It currently runs two restaurants on London’s Dover Street and Westbourne Grove
