To enter chefs must create a menu for two people including a plant-based starter, a lamb main course featuring two cuts, and a modern take on a ‘floating island’ dessert.
The competition is open to chefs from any area of the hospitality industry aged 24 or above on 1 February 2018.
The NCOTY is considered one of the UK’s toughest cooking competitions, with previous winners including Gordon Ramsay, Mark Sargeant, Simon Hulstone and Russell Bateman.
Last year Luke Selby, former head chef at Dabbous in London, took the title after winning the junior competition in 2014.

Candidates have until 30 March to submit their entry.
A shortlist of 40 semi-finalists will be announced on 18 May, who will go on to compete in heats at Sheffield College on 12 June and Le Cordon Bleu London on 19 June.
Ten chefs will make it through to the final at The Restaurant Show on 2 October, where they will be judged by past winners and some of the top chefs in the country.
