Tuk Shop will offer a menu focused on Thai curries, noodles, rice dishes and salads using Leon’s fast food model.
The venture, first mooted by Leon co-founder John Vincent last week, will launch with a pop-up in one of Leon’s existing West End restaurants in early April.
It is the first link-up between Leon and Bangkok-based Aylmer Aaharn, which launched in partnership with the Australian chef in 2013. Thompson, however, will not be working directly on the Tuk Shop project and will continue to focus on his restaurant Nahm, located at the COMO Metropolitan hotel in Bangkok.
The group also runs four restaurants in Yangon, Myanmar, under its hospitality group 57 Below.
