McGee gained experience at Dinner by Heston Blumenthal and Launceston Place, before making his name at the much-loved Truscott Arms gastropub in Maida Vale prior to its closure in 2016.
He joins Corrigan’s after the departure of former chef director Ross Bryans, who left the restaurant in January.
Corrigan’s said in an announcement that McGee will focus on ‘cooking the best of Irish produce…making the most of the weekly deliveries from the Corrigan’s Estate, Virginia Park Lodge in Cava, Ireland’.
“It’s great to have Aidan on board,” says Corrigan. “We’re celebrating Corrigan’s Mayfair’s 10th anniversary this year and Aidan will help to build on our success by cooking some of the finest Irish and British fare in West London.”
Corrigan’s Mayfair opened in 2008 and was ranked fifth in Restaurant magazine's National Restaurant Awards top 100 list the following year.
The Corrigan Restaurants group also includes Bentley’s Oyster Bar & Grill in London.
