The grab’n’go restaurant serves Nikkei cuisine and currently operates one site on Eastcheap in the City of London.
The menu will offer a selection of sushi, bento and ceviche, with dishes including maracuya salmon tiradito; truffle tuna tataki; and rice bowls with toppings of salmon; chicken teriyaki; chicken curry; and chicken katsu.
The restaurant will also serve a selection of sides including the likes of chicken wings; cassava chips; gyoza; pork buns; toasted corn and steamed edamame.
Waka is the brainchild of siblings Irakli and Nino Sopromadze and focuses on Nikkei cuisine, a fusion of Peruvian and Japanese styles that evolved in Peru in the 1800s. The pair opened their debut London restaurant last year.
Nikkei cuisine has been popularised in London in the last few years by the likes of Sushisamba and Kurt Zdesar’s Chotto Matte.
Waka will join a host of casual dining operators at the White City Place development, including Pizza Street; The Athenian; Coco di Mama; and Butterscotch Bakery.
Wine bar and restaurant Wellbourne and Karachi kitchen Shola are due to open at White City Place this spring.
