Roy Brett to launch new seafood restaurant with his supplier of 15 years
High profile Scottish seafood chef Roy Brett is teaming up with the owner of Welch Fishmongers to open a new seafood restaurant in Edinburgh.

The Fishmarket is expected to open in Leith’s Newhaven Harbour early next month. Details are scarce, but the restaurant will sport a Champagne and oyster bar and offer a range of sustainable fish dishes.

Gary Welch, owner of Welch Fishmongers, has supplied fish to Brett’s award winning seafood restaurant Ondine, also in Edinburgh, for 15 years.  

The pair hope to revive the fish market, and the unit chosen for the restaurant dates back to 1896.

Although the site is still being renovated, new additions to the high-ceilinged space include wooden floors and tiled walls. 

Large windows face out onto a wooden decked terrace, with the view of a lighthouse.

Brett has a wealth of experience in seafood, having held a role at Rick Stein’s Padstow flagship The Seafood Restaurants prior to opening Ondine. 

A regular on Restaurant’s list of the top 100 places to eat in the UK, Ondine is known for its high quality, unfussy seafood dishes.  

The new restaurant will be close to Welch’s fish processing and smoking operation.

The team is currently looking for staff, including a general manager.
