Opening at 63 Parkway, the 15-cover KooKoo will target the lunchtime trade, opening from 11am until 6pm.
It will serve a selection of proteins such as rump steak chimichurri; and wasabi and lime salmon. These will be served alongside salads including curry roasted cauliflower; heritage tomato and pickled fennel; smoked Applewood dressed baby gem with pickled onion; and aubergine pickled red cabbage and feta.
Grab’n’go options include spinach wraps made with charcoal and coconut filled with chimichurri beef; Cajun chicken; and black bean vegan patties.
Dessert options include a chai tea pudding and an almond and coconut ‘energy bite’.
The addition of KooKoo to the Hook site follows a major revamp of the latter’s menu and interior.
Previously a good-quality fish and chip shop, the restaurant is now offering a more wide-ranging selection of seafood dishes in a bid to increase spend per head and boost evening trade.
