Celebrated South American chef Francis Mallmann is coming to London to run a pop-up next month.

The restaurateur, author and star of Netflix’s Chef’s Table will be cooking at Wolfgang Puck’s CUT restaurant at the 45 Park Lane hotel in Mayfair for three nights from 3-5 October.

Argentine chef Malmann, who is famous for his carnivorous dishes cooked over open fires and in clay ovens, will serve a six-course tasting menu priced at £280 – excluding drinks.

Dishes will include smashed crusty Andean potato with smoked butter and caviar; slow roasted rubia gallega rib eye on the bone; plancha avocado with salmon confit; and desserts ‘from the river plate’.

“This will be a perfect meal; it has two of my favourite ingredients… crusty potato and rib eye,” says Mallmann. “I’ve cooked with my dear friend Wolfgang Puck in LA before, but for my first time cooking in London I’m looking forward to sharing a kitchen with [CUT executive chef] David McIntyre.

“He has the respect for product that is the essential starting point for making a great, beautiful steak and the mastery of a simple way of grill cooking that is very difficult to achieve.”

The tasting menu will be accompanied by a series of Argentinian wines from the Bodega Catena Zapata winery, which have been imported for the evening by Puck’s senior operations partner Alex Resnik.

Mallmann owns a number of restaurants worldwide, mainly in south America.
