It marks a return to D&D for the Portuguese-born chef, who previously oversaw the group’s Le Pont de la Tour restaurant.
He has rejoined the company from a position as executive head chef at London's Aqua Shard.
Goncalves will start introducing a small selection of new dishes to the Quaglino’s menu this year, including more vegan and vegetarian options.
An entirely new menu will be available from January 2019.
“Quaglino’s is one of London’s most iconic restaurants...I’m excited to challenge my creativity further whilst honouring the restaurant’s heritage,” says Goncalves.
Quaglino’s was founded in 1929 by Italian restaurateur Giovanni Quaglino and became a favourite celebrity haunt.
It was relaunched by Sir Terence Conran in the early 1990’s, before D&D bought out the company and gave the restaurant a multi-million pound revamp in 2014.
