Cafe Rouge turns chicken with new virtual brand Chef & Rooster

French restaurant chain Cafe Rouge is spreading its wings with the trial of a new chicken-focused virtual brand, called Chef & Rooster, at a number of selected sites across the country.

The Casual Dining Group (CDG) brand has created the chicken-focused menu, which is being offered through Deliveroo in Brighton, Greenwich, Canary Wharf and Edinburgh. Menu items include whole and half roast marinated chicken with sauces, a spicy chickpea burger as well as a chicken burger, wings, dippers and potato and sweet potato fries.

The concept is similar to CDG stablemate Las Iguanas’ virtual brand Blazing Bird. Café Rouge also operates virtual brand Stack & Grill from its kitchens, which features a menu of beef burgers, croque monsieurs, fries and wings.

James Spragg, chief operating officer at CDG, said earlier this year the group was looking to get a “slice of the delivery market” through the launch of Stack & Grill.

He said with Café Rouge busy in the day but quieter in the evening, there was capacity in its kitchens for more delivery customers at that particular day part.

The brand also operates a Café Rouge Rapide at London’s Euston station that offers French food to take away during the day and which turns into a bistro in the evening.
