Public House by Nico will open in the former Mallard bar in the city’s West End in early December.
It comes after the chef, who previously cooked at Michelin-starred Number One at Balmoral, launched his debut restaurant 111 by Nico in Glasgow in 2011.
His next restaurant, Six by Nico, opened in the city in 2015 and serves a six-course tasting menu based on a theme, which changes every six weeks. It is recommended in the Michelin Guide Great Britain and Ireland.
Simeone’s new gastropub is expected to offer a more relaxed all-day menu, serving his take on pub classics such as burgers layered with Scottish cheese; rare-breed steaks and ‘market fresh’ battered fish with triple cooked chips.
"This is a new chapter for our restaurant portfolio,” says Simeone. “Our team will deliver great comfort food, but in a refined way.
“The menu will feature small plates based on classic pub grub and will be available all day with an additional brunch menu for Saturday and Sundays."
The chef, born in Glasgow to Italian parents, also opened a Six by Nico restaurant in Edinburgh in March 2018.
