He has joined following the departure of fellow Liverpudlian Aiden Byrne, who stepped down as chef director in November to relaunch Manchester House.
Hughson began his career at Manchester’s Mash and Air in 1997, and has also cooked under Gordon Ramsay at The Savoy Grill, Gary Rhodes at Rhodes W1 and at The Belvedere with Marco Pierre White.
He promises his cooking style at 20 Stories will be about “good honest food”.
“I’m not here to try and re-educate anyone,” says Hughson. “Diners in this city are far more discerning than they were 20 years ago. I have some big boots to fill here at 20 Stories but I’m really excited about the role.”
An announcement confirming his appointment says 2019 will see “significant changes” at 20 Stories, designed to keep the restaurant “at the top of its game”.
20 Stories was D&D London’s first Manchester site when it launched in early 2018.
The 300-cover dining room is situated in the No1 Spinningfields development in the city centre.
