Chef Brett Barnes to oversee Barley gastropub

A former head chef at London's Salt Yard Group is to oversee the £1m relaunch of a Hertfordshire pub.

Brett Barnes, who has also worked at the Michelin-starred Star Inn at Harome, Arbutus, and HIX, will take the reins at The Fox & Hounds in Barley when it reopens in April.

The 17th​ century pub has been closed since 2012, but was acquired last year by property developer Colin Blundell and his friend Robin Skidmore.

Barnes will serve a daily-changing menu, combining “traditional pub classics with more progressive and seasonal dishes”, using local suppliers and produce grown in the pub’s own garden.

“The Fox & Hounds has been a focal point of the community for centuries, but sadly it’s been closed for nearly seven years and has required some serious TLC to restore it to its 350-year-old glory,” says Barnes.

“I’ve been looking to open my own restaurant for some time so when Robin and Colin came to me with this opportunity, I couldn’t wait to get started!”
