Thunderbird lines up third permanent London restaurant

Thunderbird Fried Chicken is to open its third confirmed London restaurant, close to Charing Cross station, this April.

The fast-growing group has secured a site on Villiers Street after launching its first permanent restaurant in Brixton in February.

Thunderbird has a further opening lined up at London’s O2 arena​, and also trades out of street food hubs Dinerama in Shoreditch and Giant Robot in Canary Wharf.

Founded by Matt Harris as BBQ Lab in 2015, the group recently secured backing from private equity firm TriSpan - which bought a majority stake in Rosa's Thai Cafe in 2018​ - towards its expansion. The deal has seen Marcel Khan, former operations director at Five Guys in the UK, France, Spain and Germany, join as chief executive.

“I have been blown away with the response we have received since opening our first permanent home in Brixton,” says Harris. “I can’t contain my excitement about opening our new baby in the heart of central London.”

The Villers Street site will serve the group’s Thunderbun chicken burger, as well as its salted caramel chicken wings.
