Norma will be inspired by the food and culture of Sicily, with all-day dishes ranging from anti-pasti to grilled meat and a whole fish to share.
It will open in a separate site to the hotel, split across a three-floor townhouse on Charlotte Street, Fitzrovia. It will include a cocktail bar, private dining space, and crudo bar serving seasonal raw seafood.
The project marks a return to Mediterranean cuisine for Tish, who joined the St James' hotel in 2018. He previously spent 11 years at the Salt Yard Group, where he launched the Dehesa, Ember Yard and Opera Tavern tapas restaurants and Italian site Veneta.
“I'm really excited about launching Norma with The Stafford team, as it’s a concept I'm passionate about and have been working on for a while,” says Tish.
“I'm intrigued by Sicily and the Moorish influences found in its culture and architecture, and Norma has been inspired by much time eating and drinking though this part of the world.”
Tish also oversees The Stafford London’s Game Bird restaurant and the American Bar.
