The pair, who both left Welsh hospitality group The Seren Collection earlier this year, are to launch Hide and Fox in the village of Saltwood.
It will serve a modern British menu with a focus on local Kent produce and fine wines.
Barsby previously spent three years as head chef at Gidleigh Park under Michael Caines and met Bussi at The Bath Priory, where she was sommelier and later restaurant manager.
He joined Seren Collection's Grove of Narbeth hotel in 2016, where he maintained its three-AA-rosette rating, and was a semi-finalist for National Chef of the Year 2018.
“This is a realisation of a dream for me, moving back to my home county to open our first solo venture,” says Barsby.
“Kent has some of the finest produce in the UK and I can't wait to get them on the menu and to seek out more of what Kent has to offer. It's the beginning of a journey and with Alice by my side I know it will be a special one.”
Hide and Fox opens on 8 June.
