Snaith, who is also chef patron at the three-AA-rosette Titchwell Manor hotel in Norfolk, already opened Eric's Fish And Chips in Thornham in 2015.
He and his wife Lydia will launch a second fish and chip site in St Ives, Cambridgeshire on 1 June, followed by a third in Holt, Norfolk on 20 June.
The 66-cover St Ives restaurant's menu will include classic cod and chips fried in Green King IPA batter with beef dripping; a Japanese-style fish burger; and gruyere and spinach arancini.
There’ll also be an ice cream station serving gelato and sorbets with toppings such as caramelised cornflakes, all made in collaboration with East Coast Gelato.
“The St Ives site will have its own look and feel, whilst continuing the tradition of serving the highest-quality sustainably sourced fish to locals and visitors alike,” says Eric.
